Ingredients

The ingredients are:
  • 3 large eggs (separated)
  • 100 grams caster sugar (fine granulated)
  • 225 grams mascarpone cheese
  • 1 1/2 tablespoons brandy
  • 225 ml brewed coffee (strong, black)
  • 50 ml milk
  • 200 grams sponge fingers
  • 50 grams semi-sweet chocolate (plain)

How to Make

  • Step 1: Beat the egg yolks with the sugar until light and frothy, soft and creamy then beat the egg whites until they stand in stiff peaks.

  • Step 2: Add the mascarpone cheese to the egg yolks, mix well and then add the brandy. Gently fold in the egg whites.

  • Step 3: Put the coffee into another bowl with the milk and dip the sponge fingers briefly into the mixture and use them to line 6 individual glasses (a goblet shape glass dish is perfect for this if available).

  • Step 4: Pour the cheese mixture on top and decorate with grated chocolate.

  • Step 5: Cover with plastic wrap and refrigerate until ready to serve.
