Step 1: Beat the egg yolks with the sugar until light and frothy, soft and creamy then beat the egg whites until they stand in stiff peaks.
Step 2: Add the mascarpone cheese to the egg yolks, mix well and then add the brandy. Gently fold in the egg whites.
Step 3: Put the coffee into another bowl with the milk and dip the sponge fingers briefly into the mixture and use them to line 6 individual glasses (a goblet shape glass dish is perfect for this if available).
Step 4: Pour the cheese mixture on top and decorate with grated chocolate.
Step 5: Cover with plastic wrap and refrigerate until ready to serve.
