Step by Step Method

Step 1

Pound each chicken bread until thin ( 1/4" thin or less), then sprinkle breasts with salt and pepper, then pour the juice over the breasts and let sit 5-10 minutes.

Step 2

In a nonstick skillet, over medium to medium/high heat, melt the butter and oil.

Step 3

Dip the breasts in the egg, then the breadcrumbs, then the egg again - immediately fry in the oil until brown on both sides and cooked through.

Step 4

If you are cooking in 2 batches, wipe the skillet in between and add more butter and oil.

Step 5

Drain on paper towels.
