"Lovely omelet for a light dinner, brunch or lunch. Use your favorite cheese and favorite herbs. Fresh herbs make a difference. A soft goat cheese is impressive for this recipe. This recipe is for one serving. Repeat recipe and use another skillet for two servings"

Made for a great lunch. The addition of flour and baking powder unlike the ones I've made combine to make for a light and lovely winner. I did have to sub the cheese and not having the fresh thyme on hand used a pinch of dry and snipped in a bit of parsley. And yes I topped with salsa!
