Step by Step Method

Step 1

Beat the eggs together with the cottage cheese, milk, flour and baking powder Sprinkle in the herbs

Step 2

Lightly spray a skillet with oil, medium heat (6 on an electric stove) pour in eggs, cover pan After 3 minutes add cheese, cover and cook for a further 2 minutes or until the eggs are set and the bottom is golden

Step 3

Flip the omelet in half and serve Add salsa

Made for a great lunch. The addition of flour and baking powder unlike the ones I've made combine to make for a light and lovely winner. I did have to sub the cheese and not having the fresh thyme on hand used a pinch of dry and snipped in a bit of parsley. And yes I topped with salsa!
