Step by Step Method
Step 1
Over medium heat stirfry chicken in olive oil until no long pink, about 10 minutes; add onion, carrots celery and sweet pepper, stirfry about 5 minutes until tender crisp; add broccoli and coleslaw mix; stirfry a further 2 to 3 minutes. Grind pepper over and stir.
Step 2
Meanwhile, whisk together orange juice and cornstarch; pour over chicken/veggies mixture , bring to boil while stirring. Simmer about 5 minutes or until thickened to your liking. If necessary add a little more orange juice to get the consistency you like.
Step 3
Serve over brown rice
