Ingredients

The ingredients are:
  • 1 teaspoon olive oil
  • 1 large chicken breast (boneless, skinless, chopped into bite sized pieces)
  • 1/4 cups carrots, thinly sliced
  • 1/4 cup red onion, thinly sliced
  • 2 celery ribs, sliced
  • 1/4 cup sweet pepper, any colour, diced
  • 1/2 cup broccoli crowns, sliced
  • 2 cups cole slaw mix
  • 1/2 teaspoon pepper, freshly ground
  • SAUCE
  • 3/4 cup orange juice, unsweetened (we like with pulp)
  • 1 tablespoon corn starch

How to Make

  • Step 1: Over medium heat stirfry chicken in olive oil until no long pink, about 10 minutes; add onion, carrots celery and sweet pepper, stirfry about 5 minutes until tender crisp; add broccoli and coleslaw mix; stirfry a further 2 to 3 minutes. Grind pepper over and stir.

  • Step 2: Meanwhile, whisk together orange juice and cornstarch; pour over chicken/veggies mixture , bring to boil while stirring. Simmer about 5 minutes or until thickened to your liking. If necessary add a little more orange juice to get the consistency you like.

  • Step 3: Serve over brown rice
