Step by Step Method

Step 1

Preheat a ridged grill pan on top of the stove for about 10 minutes.

Step 2

Grill the zucchini slices until tender and lightly browned on both sides.

Step 3

In a bowl, mix the cubes of cheese with the lemon zest and some of the chopped herbs, tossing to coat the cheese.

Step 4

Place a piece of cheese on each zucchini slice. Roll up and secure with a toothpick.

Step 5

Put the rolls into a bowl and drizzle over a little olive oil and the lemon juice.

Step 6

Sprinkle with the remaining herbs and season with salt and black pepper.

Step 7

Refrigerate for 30 minutes. If preparing in advance, leave in the refrigerator covered with plastic film.

Step 8

When ready to serve, add a little extra fresh lemon juice and black pepper and stir gently.
