Step 1: Preheat a ridged grill pan on top of the stove for about 10 minutes.
Step 2: Grill the zucchini slices until tender and lightly browned on both sides.
Step 3: In a bowl, mix the cubes of cheese with the lemon zest and some of the chopped herbs, tossing to coat the cheese.
Step 4: Place a piece of cheese on each zucchini slice. Roll up and secure with a toothpick.
Step 5: Put the rolls into a bowl and drizzle over a little olive oil and the lemon juice.
Step 6: Sprinkle with the remaining herbs and season with salt and black pepper.
Step 7: Refrigerate for 30 minutes. If preparing in advance, leave in the refrigerator covered with plastic film.
Step 8: When ready to serve, add a little extra fresh lemon juice and black pepper and stir gently.
