Ingredients

The ingredients are:
  • 12 cups sliced zucchini (6 medium zucchini sliced thinly lengthwise)
  • 10 1/2 ounces goat cheese (hard cheese, diced)
  • 1 lemon (grated zest)
  • 1 lemon, juiced
  • 1 small bunch fresh parsley (flat-leaf parsley, chopped)
  • 1 small bunch fresh basil leaves (roughly torn)
  • 3 tablespoons olive oil (extra-virgin olive oil to 4 tbs)
  • Salt, to taste
  • Freshly-ground black pepper, to taste

How to Make

  • Step 1: Preheat a ridged grill pan on top of the stove for about 10 minutes.

  • Step 2: Grill the zucchini slices until tender and lightly browned on both sides.

  • Step 3: In a bowl, mix the cubes of cheese with the lemon zest and some of the chopped herbs, tossing to coat the cheese.

  • Step 4: Place a piece of cheese on each zucchini slice. Roll up and secure with a toothpick.

  • Step 5: Put the rolls into a bowl and drizzle over a little olive oil and the lemon juice.

  • Step 6: Sprinkle with the remaining herbs and season with salt and black pepper.

  • Step 7: Refrigerate for 30 minutes. If preparing in advance, leave in the refrigerator covered with plastic film.

  • Step 8: When ready to serve, add a little extra fresh lemon juice and black pepper and stir gently.
