Step by Step Method
Step 1
Soak skewers in water for at least 30 minutes before using. Light grill to medium-low heat.
Step 2
To make sauce, combine ingredients in a food processor (Magic Bullet) and run until pureed.
Step 3
Cut peaches, red onion, and halloumi into roughly the same-sized chunks. Thread, alternating peaches, halloumi, and onion, onto the soaked skewers (roughly 3 or4 of each). Continue with remaining skewers. Brush mix with olive oil and sprinkle with salt and pepper.
Step 4
Grill skewers, turning occasionally, until halloumi is beginning to char, 2 to 3 minutes per side. Serve skewers with basil puree.
