"Summer on a Stick! The sweetness of the peaches, the saltiness of the Halloumi, and the silky spicy honey goodness of the sauce... to die for! From Naturally Ellen."
Soak skewers in water for at least 30 minutes before using. Light grill to medium-low heat.
To make sauce, combine ingredients in a food processor (Magic Bullet) and run until pureed.
Cut peaches, red onion, and halloumi into roughly the same-sized chunks. Thread, alternating peaches, halloumi, and onion, onto the soaked skewers (roughly 3 or4 of each). Continue with remaining skewers. Brush mix with olive oil and sprinkle with salt and pepper.
Grill skewers, turning occasionally, until halloumi is beginning to char, 2 to 3 minutes per side. Serve skewers with basil puree.
