Ingredients

The ingredients are:
  • FOR THE SAUCE
  • 1 cup fresh basil, packed
  • 2 jalapeño peppers, seeds removed
  • 2 tablespoons lemon juice
  • 3 tablespoons olive oil
  • 2 teaspoons honey
  • 1/4 teaspoon sea salt
  • FOR THE SKEWERS
  • 1 pound peaches (2 just-ripe peaches)
  • 1/2 medium red onion
  • 8 ounces halloumi cheese
  • 1 tablespoon olive oil
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper

How to Make

  • Step 1: Soak skewers in water for at least 30 minutes before using. Light grill to medium-low heat.

  • Step 2: To make sauce, combine ingredients in a food processor (Magic Bullet) and run until pureed.

  • Step 3: Cut peaches, red onion, and halloumi into roughly the same-sized chunks. Thread, alternating peaches, halloumi, and onion, onto the soaked skewers (roughly 3 or4 of each). Continue with remaining skewers. Brush mix with olive oil and sprinkle with salt and pepper.

  • Step 4: Grill skewers, turning occasionally, until halloumi is beginning to char, 2 to 3 minutes per side. Serve skewers with basil puree.
