"I saw a photo on Pinterest of a grilled cheese sandwich made with mozzarella cheese that looked simply amazing. So I made sandwiches today to reflect the photo. My DD said it tastes across between a cheese stick and French toast. I thought it was just as amazingly delicious as the photo with the crunch of the bread, the gooey mozzarella goodness oozing out. My DD and DH dipped it in red pasta sauce whereas I just ate mine plain. Yummy!"

Step by Step Method

Step 1

Place the 12 slices of bread out on a cutting board to assemble sandwiches in pairs.

Step 2

Add slices of mozzarella to cover one slice of bread in each pair.

Step 3

Generously slather butter on to the sides with no cheese, and place on top of cheese with butter facing up, so all four sandwiches are together.

Step 4

Add peanut oil & two tablespoons butter to skillet on medium heat and allow to warm up until butter is melted and hot but not brown.

Step 5

Swirl butter oil mixture around so it coats the whole pan.

Step 6

Add two sandwiches to the skillet with buttered side facing up and grill for 2-3 minutes.

Step 7

Flip sandwiches over and cook for an additional 2-3 minutes, using spatula to press the bread down.

Step 8

Remove sandwiches from skillet and add another tablespoon of butter to the skillet to cook the next two sandwiches.

Step 9

Add next two sandwiches to the skillet with buttered side facing up and grill for 2-3 minutes.

Step 10

Flip sandwiches over and cook for an additional 2-3 minutes, using spatula to press the bread down.

Step 11

Cook pasta sauce in microwave for 1 minute covered.

Step 12

Serve with sandwiches for dipping.

I made 2 of these for DH who loves grilled cheese sandwiches. I used light rye bread and followed the recipe as listed. He must of loved it because he was giving me the thumbs up while eating it and walking away as he was heading off to go fishing. Made for the Billboard Recipe Tag Game.

This is so so so good, I was very very pleased with this recipe. I bought a loaf of freshly made potato bread this morning and made half of the recipe for lunch today and dipped the sandwich in salsa sauce I had in the fridge.

I really liked dipping my sandwich pieces in the sauce and eating them. I had mine while I was watching tv for a late dinner/snack. This would be good with other cheeses as well. Thank you for posting this one Deb! Linda

YUM ! YUM ! and YUM ! These were sooo good! i couldn't find any potato bread but i did find some potato buns, grilled them in my grill frypan and they came out delicious. We used a hot and spicy pizza sauce for dipping which went perfectly with the mozzarella. Great idea to use a dipping sauce! For something so simple and quick this is something i will be doing often, they made a nice light supper that didn't heat up the kitchen on a hot day, thanks for posting.
