Step 1: Place the 12 slices of bread out on a cutting board to assemble sandwiches in pairs.
Step 2: Add slices of mozzarella to cover one slice of bread in each pair.
Step 3: Generously slather butter on to the sides with no cheese, and place on top of cheese with butter facing up, so all four sandwiches are together.
Step 4: Add peanut oil & two tablespoons butter to skillet on medium heat and allow to warm up until butter is melted and hot but not brown.
Step 5: Swirl butter oil mixture around so it coats the whole pan.
Step 6: Add two sandwiches to the skillet with buttered side facing up and grill for 2-3 minutes.
Step 7: Flip sandwiches over and cook for an additional 2-3 minutes, using spatula to press the bread down.
Step 8: Remove sandwiches from skillet and add another tablespoon of butter to the skillet to cook the next two sandwiches.
Step 9: Add next two sandwiches to the skillet with buttered side facing up and grill for 2-3 minutes.
Step 10: Flip sandwiches over and cook for an additional 2-3 minutes, using spatula to press the bread down.
Step 11: Cook pasta sauce in microwave for 1 minute covered.
Step 12: Serve with sandwiches for dipping.
