Step by Step Method

Step 1

Heat water and cook spaghetti until al dente.

Step 2

Meanwhile, heat oil.

Step 3

Add mushrooms, garlic, tomato sauce and tomatoes, oregano, vinegar and olives.

Step 4

Cook until thickened, stirring occasionally.

Step 5

At end add onions and parsley.

Step 6

Plate by putting sauce on pasta.

Step 7

Top with feta cheese and ground black pepper to taste.

Ten stars! Evelyn had tons of great recipes - and this is one I hadn't tried. I made it exactly as written with two little cheats - doubled the garlic and didn't add the green onions to the sauce, instead sprinkling them as garnish with the feta for a little fresh kick. Both DH and I LOVED this. It will be on repeat here, for sure.
