  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 pound mushrooms, sliced
  • 1/2 cup green onion, minced
  • 1 garlic clove, smashed
  • 16 ounces tomato sauce (1 can)
  • 16 ounces tomatoes, diced (1 can)
  • 1/2 cup kalamata olives, pitted and sliced
  • 1/2 cup fresh parsley, minced
  • 1 tablespoon red wine vinegar
  • 16 ounces dry spaghetti
  • 4 cups water
  • 8 ounces feta cheese, crumbled
  • 1/2 teaspoon fresh ground pepper

How to Make

  • Step 1: Heat water and cook spaghetti until al dente.

  • Step 2: Meanwhile, heat oil.

  • Step 3: Add mushrooms, garlic, tomato sauce and tomatoes, oregano, vinegar and olives.

  • Step 4: Cook until thickened, stirring occasionally.

  • Step 5: At end add onions and parsley.

  • Step 6: Plate by putting sauce on pasta.

  • Step 7: Top with feta cheese and ground black pepper to taste.
