"From Bakers grocery store. My take on it. It is a good Lent dish. They had 2 tablespoons fresh thyme and oregano. I like my way better, but you do you. lol"

Step by Step Method

Step 1

Cook pasta in heavily salted boiling water until al dente. drain, saving 1/2 cup pasta water.

Step 2

Meanwhile, in a large skillet over medium heat add the oil.

Step 3

Add mushrooms and sauté until moisture is released, season lightly.

Step 4

Add fresh herbs and spinach.

Step 5

Cook until wilted, then add lemon juice.

Step 6

Add reserved pasta water and dried herbs.

Step 7

Cook until tight.

Step 8

Add Parmesan to the skillet and remove from heat.

Step 9

Break off pieces of goat cheese and place in the skillet.

Step 10

Gently toss to combine with pasta.

Step 11

Season to taste.
