  • 1/4 teaspoon pepper
  • 1/8 teaspoon dried thyme
  • 1/4 teaspoon dried oregano
  • 1 tablespoon fresh parsley, minced
  • 1 tablespoon fresh chives, minced
  • 2 cups baby spinach, chopped
  • 1 tablespoon fresh lemon juice
  • 2 ounces parmesan cheese, shredded
  • 4 ounces soft goat cheese

How to Make

  • Step 1: Cook pasta in heavily salted boiling water until al dente. drain, saving 1/2 cup pasta water.

  • Step 2: Meanwhile, in a large skillet over medium heat add the oil.

  • Step 3: Add mushrooms and sauté until moisture is released, season lightly.

  • Step 4: Add fresh herbs and spinach.

  • Step 5: Cook until wilted, then add lemon juice.

  • Step 6: Add reserved pasta water and dried herbs.

  • Step 7: Cook until tight.

  • Step 8: Add Parmesan to the skillet and remove from heat.

  • Step 9: Break off pieces of goat cheese and place in the skillet.

  • Step 10: Gently toss to combine with pasta.

  • Step 11: Season to taste.
