Step by Step Method

Step 1

Preheat oven to 375F. Coat a baking dish with nonstick cooking spray.

Step 2

Season chicken with salt, pepper, and paprika to taste and place in shallow roasting pan.

Step 3

Beat egg yolk until light. Add honey, rum, and chicken stock. Stir in garlic, ginger, and nutmeg. Pour over chicken.

Step 4

Bake for 45 to 60 minutes, basting every 15 minutes.

Well, I was a little hesitant about this recipe when I read it, but I wanted to give it a go! I am so very pleased I did, as we really enjoyed this awesome recipe! I made the chicken as written, and the oven timing was spot on! Although it made a nice sauce in the pan, I did remove the chicken (kept it warm) and quickly added a corn flour mix to the sauce and heated it through on the stove top. Next time I will add it about 30 minutes before the chicken in ready. I must say it really did make for a nice, rich, thick and tasty sauce! We loved it here! So easy to make and so delicious! I will be making this again soon! Winner...Winner...Chicken dinner here! Thanks Mikekey.
