The ingredients are:
  • 16 ounces boneless skinless chicken breasts (two 8 oz. each)
  • Salt and pepper, to taste
  • Paprika, to taste
  • 1 egg yolk
  • 1/2 cup honey
  • 1/4 cup rum (dark)
  • 1/2 cup chicken broth
  • 2 garlic cloves, minced
  • 1/4 cup chopped candied ginger (preserved ginger)
  • 1/4 teaspoon ground nutmeg

How to Make

  • Step 1: Preheat oven to 375F. Coat a baking dish with nonstick cooking spray.

  • Step 2: Season chicken with salt, pepper, and paprika to taste and place in shallow roasting pan.

  • Step 3: Beat egg yolk until light. Add honey, rum, and chicken stock. Stir in garlic, ginger, and nutmeg. Pour over chicken.

  • Step 4: Bake for 45 to 60 minutes, basting every 15 minutes.
