Fried Haloumi Cheese & Lemon

"I came across this recipe (I don't know where it is from) loose in a cookbook and decided to make it this Sunday for our afternoon appetizer. It is easy and so tasty. Watch your timing when frying the bread & cheese. The bread should be nicely browned, the cheese golden and the lemon slices just beginning to wilt. If you wish do this on your BBQ with a solid surface"

Cut 8 thin slices from the lemons.
Squeeze 2 tablespoon of juice from remainder of the lemons. Put juice in a bowl.
Mash the minced garlic with the salt & 2 tablespoons of lemon juice.
Add sugar, mash together well..Whisk in the oil.
Toss each slice of lemon with 1/2 tablespoon of garlic/oil dressing.
Brush the bread slices with the remaining 2 tablespoons oil.
In a large skillet over medium heat fry the bread, fry the cheese & lemon slices.
Turn once to cook both sides of the bread, cheese & lemon slices.
When you turn the cheese use a metal spatula to scrape under the cheese to loosen before turning.
Serve with the lemon slices along side the cheese.
Suck on the lemon slices they are so tart & good.
