Step by Step Method

Step 1

Whisk eggs and milk together and season with salt and pepper.

Step 2

Heat oil in a small fry pan over a medium heat.

Step 3

Pour egg into the frying pan and slowly draw the cooked eggs from the edge of the pan towards the centre and swirl the pan to take the uncooked egg to the edges, once the eggs in nearly cooked but still a little wet add the fetta cheese to one side of the pan and then flip the other half of the cooked egg over the cheese and cook for another minutes to warm the feta cheese.

Step 4

Slide onto a plate and serve with some wilted spinach and roasted tomato for a low carb filling breakfast or some buttered toast if desired.

Thank you for sharing this lovely recipe Pat. I love feta cheese, this was tailor made for me. It was delicious. I enjoyed it for breakfast this morning with toast and cucumbers. Next time, I make this, I will omit the salt in the eggs. (personal preference only) Happily made for Players Favorites - 5 Star Gems.

Mmmmm is what I say about this omelette. Truthfully, I didn't know what to expect on how the feta would workout in an omelette because I had never used feta for this type of item (though I really like feta) and thought that it may be overpowering, but it made it taste real cheesy and not overpowering at all. Another lovely Omelette for my Sunday Brunch. I used crumbled Feta because I had it on hand. It melted beautifully on the inside then just before serving I sprinkled some over the top. Served with stir fried leftover bits of veggies, peppers & mushrooms. A delightful Brunch. Thanks Pat. 3 Feb 19 . So eaqdsy and so tasty.

I also used feta crumbles, and really wish I'd used sliced so I would have a more "even" melt of cheese. I doubled the recipe to serve two, and turned out delicious. Once I flipped the empty side of the omelet over, I threw baby spinach in the other side to wilt. Served with the omelet along with some black olives. Thanks for sharing!
