  • 2 large eggs
  • 1 tablespoon milk
  • 1 ounce feta cheese (sliced, 1/4 cup)
  • Salt and pepper, to taste
  • 1 teaspoon oil

How to Make

  • Step 1: Whisk eggs and milk together and season with salt and pepper.

  • Step 2: Heat oil in a small fry pan over a medium heat.

  • Step 3: Pour egg into the frying pan and slowly draw the cooked eggs from the edge of the pan towards the centre and swirl the pan to take the uncooked egg to the edges, once the eggs in nearly cooked but still a little wet add the fetta cheese to one side of the pan and then flip the other half of the cooked egg over the cheese and cook for another minutes to warm the feta cheese.

  • Step 4: Slide onto a plate and serve with some wilted spinach and roasted tomato for a low carb filling breakfast or some buttered toast if desired.
