Step by Step Method

Step 1

Melt the butter in a large skillet, medium heat, brown the rims of the mushrooms, flip and brown the tops about 3 minutes. You don't want to cook them just get a little color on them.

Step 2

Add oil to the pan and brown the garlic and chopped mushroom stems - just golden cool the garlic and stems.

Step 3

When the stems and garlic are cool mix together the all the remaing ingredients, except the mushrooms.

Step 4

Generously stuff the caps, place on a cookie sheet, bake in 350 oven for about 20 minutes. Time depends on the size of the caps. They are done when there is some moisture under the caps. Serve warm.

Definitely easy, and equally definitely tasty! The cayenne gave them an unexpected but very welcome bite, and the best part for us was being able to have stuffed mushrooms that didn't involve breadcrumbs. I used the giant stuffing mushrooms, and had about 1/3 cup filling left. Which was amazing when spread on English muffins and broiled. Wins all the way around! Thank you so much for this; I'll be making them often.
