Step by Step Method

Step 1

With a rolling pin smack the cucumbers until they break apart then tear them into bite-size pieces; transfer to a colander and toss them with the kosher salt and let sit for 10 minutes to drain off the excess liquid.

Step 2

Transfer the cucumbers to a bowl and toss with the scallions, rice vinegar and sesame seeds. Drizzle with chili oil.

Yum! Like Teresa, I thought these had a rather therapeutic effect! LOL. Yes, I liked the technique, which allowed the flavors to meld into the cucumbers. Made exactly as written but added a good couple of shakes of chili oil because we like things spicy. Thanks for sharing!

What a fun recipe to make...I got out all my frustrations smacking the cucumber...and then tearing them apart...we really enjoyed the flavors...at first I thought there was way too much salt...so I let it drain for an additional 10 minutes...once you add all the other ingredients the salt doesn't overpower the dish...I drizzled a good amount of the chili oil because we love heat...just keep an eye on the chili oil if you are heat sensitive...made for Billboard tag game...
