  • 1 pound cucumbers (English cucumbers)
  • 1 teaspoon kosher salt
  • 3 scallions, sliced
  • 3 tablespoons rice vinegar (unseasoned)
  • 1 teaspoon sesame seeds (toasted)
  • Chili oil

How to Make

  • Step 1: With a rolling pin smack the cucumbers until they break apart then tear them into bite-size pieces; transfer to a colander and toss them with the kosher salt and let sit for 10 minutes to drain off the excess liquid.

  • Step 2: Transfer the cucumbers to a bowl and toss with the scallions, rice vinegar and sesame seeds. Drizzle with chili oil.
