Step 1

Preheat oven to 475°F.

Step 2

Toss chicken wings with salt and pepper in large bowl (clean the bowl for tossing with sauce). Divide the wings between 2 oiled rimmed baking sheets and spread in a single layer. Roast in oven at 475°F turning once during cooking until crisp and golden brown, about 45 minutes.

Step 3

Meanwhile melt butter, chopped thyme, Cajun seasoning and cayenne pepper in a small saucepan over medium heat. Remove from the heat and whisk in Creole mustard , Worcestershire sauce and honey. Toss with the wings in the cleaned large bowl.

I made a half recipe using 5 V-wings (no tips left intact and 1 bon-in skin-on thigh with a weight of just under 2 pound) and made as per recipe for wings that had crispy skin, succulent fall of the bone meat and a spicy, sweet mustard taste that was finger licking good - keep a finger bowl and napkins handy for this one.
