Step by Step Method

Step 1

In a large saucepan, saute onion in butter until tender.

Step 2

Add in garlic, basil, paprika and cayenne; cook for 2 minutes.

Step 3

Stir in tomatoes with juice, tomato soup and milk, salt and pepper; bring to a boil.

Step 4

Reduce heat; cover and simmer for 20 minutes (add in a small amount of sugar if desired).

Step 5

Stir in cream cheese until melted.

Step 6

Ladle in bowls then sprinkle with croutons.
