  • 1/4 cup butter
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 1/2 teaspoon dried basil
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper, or to taste
  • 2 (14 1/2 ounce) cans diced tomatoes, undrained
  • 2 (10 3/4 ounce) cans condensed tomato soup, undiluted
  • 1 1/2 cups light cream or milk
  • 1 teaspoon seasoned salt, or to taste
  • 1 teaspoon fresh ground black pepper, or to taste
  • Sugar, to taste (optional)
  • 1 (3 ounce) package cream cheese, cubed
  • Croutons, optional

How to Make

  • Step 1: In a large saucepan, saute onion in butter until tender.

  • Step 2: Add in garlic, basil, paprika and cayenne; cook for 2 minutes.

  • Step 3: Stir in tomatoes with juice, tomato soup and milk, salt and pepper; bring to a boil.

  • Step 4: Reduce heat; cover and simmer for 20 minutes (add in a small amount of sugar if desired).

  • Step 5: Stir in cream cheese until melted.

  • Step 6: Ladle in bowls then sprinkle with croutons.
