Step 1
Combine sauce, cream, parmesan, chives, mustard, juice and garlic in a large jug and swith salt and ground white pepper and whisk until smooth.
Step 2
Place fish in an oiled, large ovenproof dish (12-cup capacity) and sprinkle with flour seasoned with salt and pepper and toss to coat and then arrange in a single layer and then pour over sauce mixture.
Step 3
Cook, uncovered, in a hot oven (200C) for 35 minutes.
Step 4
Meanwhile, make topping by spreading fries evenly over a large oven tray.
Step 5
Cook in same hot oven, turning halfway for about 30 minutes, or until golden brown.
Step 6
Remove and transfer to a large bowl and add parmesan and toss to coat.
Step 7
Remove fish from oven and arrange topping over fish and return to oven.
Step 8
Cook for a further 10 minutes, or until topping is golden and crisp and then remove and stand for 5 minutes before serving.
Step 9
TIP - They used Heinz Four Cheese Lasagne Sauce for this recipe. Thick white fish fillets, such as ling, are best as they retain their shape during cooking.
