Step 3: Cook, uncovered, in a hot oven (200C) for 35 minutes.
Step 4: Meanwhile, make topping by spreading fries evenly over a large oven tray.
Step 5: Cook in same hot oven, turning halfway for about 30 minutes, or until golden brown.
Step 6: Remove and transfer to a large bowl and add parmesan and toss to coat.
Step 7: Remove fish from oven and arrange topping over fish and return to oven.
Step 8: Cook for a further 10 minutes, or until topping is golden and crisp and then remove and stand for 5 minutes before serving.
Step 9: TIP - They used Heinz Four Cheese Lasagne Sauce for this recipe. Thick white fish fillets, such as ling, are best as they retain their shape during cooking.
