On 9/26/13 I needed a frosting to go with a Spice Cake,and thought " Cream Cheese Frosting goes great with Carrot Cake so why not a Spice Cake ? ". Since a a small amount was needed,this recipe was reduced by half.And I was very pleased that it worked so well with my spice cake.Anytime I need a Cream Cheese Frosting, I will return to this recipe. Great frosting - made a perfect amount for a 9x13 pumpkin cake that I made. I added about 3 cups of sugar and had a very soft frosting.

Okay, I must say this frosting is just to die for. I made this to frost your Carrot Cake/Muffin recipe and I had about 1 cup left over and I just about ate it all by itself. I was not able to toss out the bit that was left because it is that good. As a matter of fact I might just go finish it off right now, he he he.

This is very lovely! I had a hard time keeping my spoon out of the bowl! At one point, thought I would not have enough to frost the cake! It did indeed cover a 9x13 cake. Did make one wee change, I left out the vanilla and added lemon juice to cut down the sweet a bit as I prefer some tang in the frosting. This is now going to be THE one for me. Thank you Gerry for sharing this fast and easy recipe! Made for Billboard Recipe Tag.
