On 9/26/13 I needed a frosting to go with a Spice Cake,and thought " Cream Cheese Frosting goes great with Carrot Cake so why not a Spice Cake ? ". Since a a small amount was needed,this recipe was reduced by half.And I was very pleased that it worked so well with my spice cake.Anytime I need a Cream Cheese Frosting, I will return to this recipe. Great frosting - made a perfect amount for a 9x13 pumpkin cake that I made. I added about 3 cups of sugar and had a very soft frosting.

Okay, I must say this frosting is just to die for. I made this to frost your Carrot Cake/Muffin recipe and I had about 1 cup left over and I just about ate it all by itself. I was not able to toss out the bit that was left because it is that good. As a matter of fact I might just go finish it off right now, he he he.

This is very lovely! I had a hard time keeping my spoon out of the bowl! At one point, thought I would not have enough to frost the cake! It did indeed cover a 9x13 cake. Did make one wee change, I left out the vanilla and added lemon juice to cut down the sweet a bit as I prefer some tang in the frosting. This is now going to be THE one for me.
