Cranberry Orange Muffins

Step 1

Preheat oven to 400 degrees F.

Step 2

Grease a 12 cup muffin pan.

Step 3

In a bowl, stir together cranberries, 1/4 cup of the sugar, and orange peel.

Step 4

In a larger bowl, sift together flour, baking powder, salt, and the rest of the sugar.

Step 5

Add oil, orange juice, and eggs all at once to the flour mixture and stir until moistened.

Step 6

Fold in sugared cranberries and nuts.

Step 7

Pour batter into muffin pan, evenly dividing batter between cups.

Step 8

Bake at 400F for 20-25 minutes or until golden brown.

Delicious muffins Sue, as expected. These lovely muffins were perfect, tender, yet crunchy and crisp on the outside. They had so much flavor. I couldn't find fresh or frozen cranberries anywhere around here, so I used dried. They worked well in the recipe and were a nice pairing with the orange and walnuts. My dh is allergic to nuts so in his version I added a little coconut. Which he enjoyed vry much. Thanks for sharing your recipe. Made for Best of 2014.

Lots of great flavor here. Orange and cranberry are a favorite combo. Only change I made was to bake 6 jumbo muffins instead of 12 regular size. For the nuts, I used pecans.

Kerfuffle-Upon-Wincle (KUW)
