Cranberry Balsamic Chicken Thighs

Step by Step Method

Step 1

Sprinkle chicken with 1/4 teaspoon each, salt and pepper. Heat 1 tablespoon extra-virgin olive oil in a large skillet over medium-high heat. Add the chicken, skin-side down, reduce heat to medium and cook, undisturbed, until golden brown, about 7 minutes. Remove all but 1 tablespoon fat from the pan.

Step 2

Turn the chicken over and add cranberries, vinegar, honey and thyme to the pan. Bring to a simmer over high heat. Then reduce heat to maintain a simmer. Partially cover and cook, stirring occasionally, until an instant-read thermometer inserted in the thickest part without touching bone reaches 165°F, 10 to 12 minutes.

Step 3

Transfer the chicken to a serving platter,. Increase heat to high, add 1/4 teaspoon salt and cook uncovered, stirring, until the sauce is thickened, about 1 minute. Serve the chicken with the sauce.

Easy-peasy and delicious! I added just a tad more honey to offset the balsamic, and it was just wonderful. The chicken came out moist and tender - we loved it! Thanks for sharing!

Simply delicious says it all. It was so easy with little ingredients with excellent results. An added plus is that it was all made in one pot. Lickety split dinner was ready in no time and we enjoyed it very much. Thank you, Teresa, for sharing. Made it for Best of 2020 as recommended by Marra.

We really enjoyed this chicken -- we used drumsticks instead of thighs but otherwise made as directed. Delicious (even my son who doesn't like cranberries enjoyed the chicken). Thanks for sharing!

We really loved this chicken. The chicken was so moist and tender. That sauce had just the right amount of berry flavor with the sweetness of the honey and the tartness of the balsamic vinegar. We couldn't find frozen cranberries so we used whole berry canned sauce. We will definitely make this again.

This was a party for the taste buds! Delicious. I have made a cranberry chicken recipe for years, but this one, with the addition of balsamic, outshines it by far, and will be the recipe I use from now on. The balsamic adds such flavor, the sauce thickens up nicely, and the chicken is moist inside and crispy on the outside. Perfection. Thank you for posting this, Teresa, it's a keeper that I'll have on rotation while cranberries are in season!
