Cranberry Balsamic Chicken Thighs

Step 1

Sprinkle chicken with 1/4 teaspoon each, salt and pepper. Heat 1 tablespoon extra-virgin olive oil in a large skillet over medium-high heat. Add the chicken, skin-side down, reduce heat to medium and cook, undisturbed, until golden brown, about 7 minutes. Remove all but 1 tablespoon fat from the pan.

Step 2

Turn the chicken over and add cranberries, vinegar, honey and thyme to the pan. Bring to a simmer over high heat. Then reduce heat to maintain a simmer. Partially cover and cook, stirring occasionally, until an instant-read thermometer inserted in the thickest part without touching bone reaches 165°F, 10 to 12 minutes.

Step 3

Transfer the chicken to a serving platter,. Increase heat to high, add 1/4 teaspoon salt and cook uncovered, stirring, until the sauce is thickened, about 1 minute. Serve the chicken with the sauce.

We really loved this chicken. The chicken was so moist and tender. That sauce had just the right amount of berry flavor with the sweetness of the honey and the tartness of the balsamic vinegar. We couldn't find frozen cranberries so we used whole berry canned sauce. We will definitely make this again.

This was a party for the taste buds! Delicious. I have made a cranberry chicken recipe for years, but this one, with the addition of balsamic, outshines it by far, and will be the recipe I use from now on. The balsamic adds such flavor, the sauce thickens up nicely, and the chicken is moist inside and crispy on the outside. Perfection. Thank you for posting this, Teresa, it's a keeper that I'll have on rotation while cranberries are in season!

This was excellent. The cranberry balsamic sauce was savory with a slight sweetness that offset the rich tang of the balsamic vinegar. In the last step, in thickening the sauce, I added another 1/2 Tbsp of honey (only because of preference), but otherwise I stuck to the recipe as written. It was excellent.

Excellent! We loved this chicken. I don't usually cook with whole cranberries so I wasn't sure what to expect. The cranberries combined well with the balsamic and honey to make a fabulous sauce! I may add just a touch more honey next time. My husband kept saying how good this was. Thank you!

Daily Inspiration

Outstanding chicken dish! We love cranberries and the combination of flavors from them, the balsamic and honey were delish. We loved the tartness, but if you prefer a sweeter cranberry sauce, just use more honey. The only change I made was to finish off the chicken and cranberry sauce in the oven - baked at 350 degrees for about 20 minutes. Going into my Best of 2018 file.

Absolutely wonderfully delicious!! We love the combo of cranberries and balsamic this was right up our alley. Fast and easy to prepare. And the odd thing...DH does not and will not eat fruit with meat. BUT...he loved this. So maybe he will start eating cranberry sauce with turkey. Thank you Teresa for another keeper!
