"This is out of the January/February 2018 Eating Well magazine...it says to round out dinner, put some farro on to cook before you start the chicken, steam broccoli while the chicken simmers and uncork a bottle of pinot noir. This was posted under their 5 ingredients section..."

Step 1

Sprinkle chicken with 1/4 teaspoon each, salt and pepper. Heat 1 tablespoon extra-virgin olive oil in a large skillet over medium-high heat. Add the chicken, skin-side down, reduce heat to medium and cook, undisturbed, until golden brown, about 7 minutes. Remove all but 1 tablespoon fat from the pan.

Step 2

Turn the chicken over and add cranberries, vinegar, honey and thyme to the pan. Bring to a simmer over high heat. Then reduce heat to maintain a simmer. Partially cover and cook, stirring occasionally, until an instant-read thermometer inserted in the thickest part without touching bone reaches 165°F, 10 to 12 minutes.

Step 3

Transfer the chicken to a serving platter,. Increase heat to high, add 1/4 teaspoon salt and cook uncovered, stirring, until the sauce is thickened, about 1 minute. Serve the chicken with the sauce.

We really enjoyed this chicken -- we used drumsticks instead of thighs but otherwise made as directed. Delicious (even my son who doesn't like cranberries enjoyed the chicken). Thanks for sharing!

We really loved this chicken. The chicken was so moist and tender. That sauce had just the right amount of berry flavor with the sweetness of the honey and the tartness of the balsamic vinegar. We couldn't find frozen cranberries so we used whole berry canned sauce. We will definitely make this again.

This was a party for the taste buds! Delicious. I have made a cranberry chicken recipe for years, but this one, with the addition of balsamic, outshines it by far, and will be the recipe I use from now on. The balsamic adds such flavor, the sauce thickens up nicely, and the chicken is moist inside and crispy on the outside. Perfection. Thank you for posting this, Teresa, it's a keeper that I'll have on rotation while cranberries are in season!

This was excellent. The cranberry balsamic sauce was savory with a slight sweetness that offset the rich tang of the balsamic vinegar. In the last step, in thickening the sauce, I added another 1/2 Tbsp of honey (only because of preference), but otherwise I stuck to the recipe as written. It was excellent.
