"New Jersey is known for its diners. One of the meals you can get in every diner is either a hot roast beef open face sandwich or one made from turkey. Leftover turkey can be used or store roasted turkey breast in the deli case. Either way it is very tasty! You can also use chicken in place of the turkey."

Step by Step Method

Step 1

Shred turkey meat into 1-2 inch pieces And set asside.

Step 2

In skillet warm up gravy until hot on medium heat for about 5 minutes.

Step 3

Add turkey to gravy and cook for an additional 5 minutes.

Step 4

Toast bread to desired doneness.

Step 5

Place one piece of toast on four plates, divide the turkey gravy mixture in to four portions and place one portion on each piece of toast.

Step 6

Serve with mashed potatoes, stuffing or French fries.

Step 7

Divide cranberry sauce in quarters and place a piece on each plate.

I made this for my lunch, making it into a double decker, with turkey and gravy in the middle and on top too. That is how we do it here in New England, since we have hearty appetites! It was delicious and very much enjoyed! Thank you for posting it here Acadiatwo! Linda

Total comfort on a plate and such a good way to use up all those leftovers from Thanksgiving. I laid down the bread, then put a layer of stuffing, then lots of turkey and gravy and a big ole scoop of cranberry sauce and some olives on the side. Such a great lunch!

I loved these sandwiches using turkey left over from Thanksgiving. I laid a scoop of stuffing on the bottom, then added the turkey, then gravy with cranberry sauce on the side. We love them and look forward to them after each holiday!

I recently made a turkey and decided to make this using the leftovers. What a wonderful sandwich, open faced or topped with another slice of bread with gravy on top as a sandwich. We loved it smothered in gravy and with stuffing and cranberry sauce for a delicious lunch!
