Step 1

Line a bowl with the lettuce leaves and set aside.

Step 2

In a small bowl combine the cottage chees, radish, green onion, salt and pepper, mix well and place on top of lettuce leaves; garnish with tomato wedges.

I have been making this Cottage Cheese Salad for lunch as well as a light supper. Used both green onions as well as diced red onion - sometime a light drizzle of our French Dressing. Not only do I love this salad it makes for great presentation. Can't wait until my next Friday lunch with my vegetarian friend. She's going to be impressed with that salad. I know I am!

Bergy (RIP" Forever in our Kitchen)

Lovely refreshing hot weather fare. Enjoyed for lunch on the patio. I didn't have any green onions so I chopped some sweet onions and added chives.
