Step 1

Place the chicken breasts in a pan and cover with broth. Bring to a simmer and cook until done, about 8 to 10 minutes.

Step 2

Allow to cool in the broth, then cut into small dice.

In a small bowl mix together the mayonnaise, sour cream, orange zest, and juice.

Step 4

Add the dressing to the chicken.

Step 5

Stir in the apple and celery.

Step 6

Place a leaf of lettuce on each of 6 slices of bread.

Step 7

Top with chicken salad and top with a second piece of bread.

Step 8

Refrigerate wrapped in plastic wrap, until ready to serve.

Step 9

Cut each sandwich in half.

Perfect chicken salad for the warm weather we are having right now. The orange zest and juice really made this chicken salad different and refreshing! I think I'll enjoy the rest on a bed of lettuce instead of bread....just a preference. Made for FYC tag game.
