  • 1/4 cup fat-free mayonnaise
  • 1/4 cup fat-free sour cream
  • 2 teaspoons grated orange zest
  • 3 tablespoons fresh orange juice
  • 6 ounce apple, whole (1 Granny Smith apple, peeled, cored,
  • And diced)
  • 4 ounces celery (cut 1/4-inch dice, 2 ribs)
  • 12 ounces sliced bread (12 slices artisan-style whole wheat bread, sliced thin)
  • Boston lettuce leaves (6 leaves)

How to Make

  • Step 1: Place the chicken breasts in a pan and cover with broth. Bring to a simmer and cook until done, about 8 to 10 minutes.

  • Step 2: Allow to cool in the broth, then cut into small dice.

  • Step 3: In a small bowl mix together the mayonnaise, sour cream, orange zest, and juice.

  • Step 4: Add the dressing to the chicken.

  • Step 5: Stir in the apple and celery.

  • Step 6: Place a leaf of lettuce on each of 6 slices of bread.

  • Step 7: Top with chicken salad and top with a second piece of bread.
