"This chicken is perfect for family or when you have company coming. It keeps well on a buffet, and is deliciously satisfying bite after bite. Step by Step Method

Step 1

Combine flour, Parmesan cheese, nutmeg, salt and freshly ground pepper.

Step 2

Place chicken in the flour mixture and press well to coat chicken.

Step 3

Place saute pan over medium heat. Add olive oil and butter.

Step 4

Add garlic slices and chicken pieces. Saute on both sides until lightly browned.

Step 5

Add the beef broth and wine, and bring to a boil.

Step 6

Cover pan, and turn heat to medium-low. After a few minutes, lift cover and stir a bit.

Step 7

Cover pan again, and allow to cook for about 20 minutes. Remove from heat.

Step 8

Taste for seasoning, and add more salt and a squeeze of fresh lemon, if desired. Garnish with parsley and serve.

One delicious dinner! I served the chicken with mushroom brown rice and sautéed pea pods. Perfect combo and well enjoyed by us around the table! Lemon and wine are just special and add so much to the flavor to the chicken. This will be made again for sure!!

A nice easy recipe to put together. I finely slice my chicken breast, so no beating was required and I had 4 breasts with a total weight of about 800 grams and followed through with the recipe but I think I may not have coated my chicken enough though I pressed as much as could on but was left with a lot of mix and the sauce did not thicken up so added a cornflour/cornstarch flurry to the sauce to thicken which gave it a nice glossy look and it definitely needed the lemon juice which I added but felt it could have had more. The end result was a meal we enjoyed served with rice and steamed vegetable, thank you LindasBusyKitchen made for Alphabet Soup Tag Game.
