Ingredients

The ingredients are:
  • 1 1/2 pounds fresh boneless skinless chicken breast ( sliced and pounded thinly, and cut into serving pieces)
  • 3 tablespoons olive oil
  • 1 tablespoon butter
  • 1/2 cup all-purpose flour
  • 1/2 cup grated Parmesan cheese (fresh, finely grated)
  • Nutmeg (dash)
  • 1 to 2 cloves garlic (peeled and sliced thinly)
  • 3/4 cup beef broth
  • 1 cup dry white wine (Chardonnay or Sauvignon Blanc works well)
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • Fresh parsley
  • Lemon (squeeze of fresh, optional)

How to Make

  • Step 1: Combine flour, Parmesan cheese, nutmeg, salt and freshly ground pepper.

  • Step 2: Place chicken in the flour mixture and press well to coat chicken.

  • Step 3: Place saute pan over medium heat. Add olive oil and butter.

  • Step 4: Add garlic slices and chicken pieces. Saute on both sides until lightly browned.

  • Step 5: Add the beef broth and wine, and bring to a boil.

  • Step 6: Cover pan, and turn heat to medium-low. After a few minutes, lift cover and stir a bit.

  • Step 7: Cover pan again, and allow to cook for about 20 minutes. Remove from heat.

  • Step 8: Taste for seasoning, and add more salt and a squeeze of fresh lemon, if desired. Garnish with parsley and serve.
