Step by Step Method

Step 1

Place chopped chicken breast, pine nuts, celery, lemon zest, chives, mayonnaise, salt and pepper into a large bowl and combine all ingredients.

Step 2

To assemble sandwiches: Spread the chicken mixture on one side of bread and place another piece of bread on top. Continue with the other slices of bread.

Step 3

Remove crust and cut the sandwiches in half to create soldiers.

Step 4

What a great way to use up some left over roast chicken, scaled back for 1 sandwich and enjoyed the crunch of the celery and the pine nuts, definitely a keeper, thank you Tisme. made for Pick Me tag game.

Made for the Pick Me Tag Game - Siggi & I both love chicken salad & these are ideal finger sammies for a lunch or afternoon tea. We esp liked the lemon flavor & texture galore. For 2 of us, I made 2 generously-filled finger sammies from a recipe meant to serve 3. I used dried chives, lemon pepper & didn't remove the crusts. Served w/sweet pickles, sliced avocado & grapes, we enjoyed them as a great lunch. Thx for sharing this recipe w/us. :-)
