  • 6 slices bread
  • 1/2 cup finely chopped celery
  • Chives (1/4 bunch, finely chopped)
  • 1/2 cup toasted pine nuts
  • 1 (1/4 pound) boneless skinless chicken breast (poached and finely chopped)
  • 1/2 lemon, zested
  • 2 tablespoons mayonnaise (whole egg)
  • Salt and pepper

How to Make

  • Step 1: Place chopped chicken breast, pine nuts, celery, lemon zest, chives, mayonnaise, salt and pepper into a large bowl and combine all ingredients.

  • Step 2: To assemble sandwiches: Spread the chicken mixture on one side of bread and place another piece of bread on top. Continue with the other slices of bread.

  • Step 3: Remove crust and cut the sandwiches in half to create soldiers.

  • Step 4: Serve.
