Step by Step Method

Step 1

In a small bowl, whisk together soy sauce, honey, lime juice, olive oil, mustard, vinegar and garlic.

Step 2

Pour marinade over chicken cubes in a shallow, glass baking dish.

Step 3

Stir until all chicken pieces are coated with marinade.

Step 4

Cover and refrigerate for 30 minutes.

Step 5

Pour 1 cup boiling water over sun-dried tomatoes and let soak for 15 minutes.

Step 6

Drain tomatoes and chop; set aside.

Step 7

Prepare pasta according to package instructions.

Step 8

Add broccoli florets to pasta cooking water for last 3 minutes.

Step 9

Drain pasta and broccoli and return to pot; keep warm.

Step 10

Transfer chicken and marinade to a large, non-stick skillet.

Step 11

Cook and stir over medium-high heat until chicken is cooked through, about 6-7 minutes.

Step 12

Add pasta, broccoli, sun-dried tomatoes and green onions.

Step 13

Mix well.

Step 14

Serve immediately.

This was a really good weeknight pasta dish -- came together fast and it was different than the Italian sorts of pasta I make more frequently. Made for Billboard Tag in the forums.

What a tasty plate of food...my chicken/broccoli hating hubby didn't even want to try it...but he loved it...he really enjoyed those little red things...I cut the recipe in half and ended up with 3 servings...so there's some in the frig which I think would make a great midnight snack cold...made for "Billboard" tag game...

Very good one bowl meal. Made as directed except for the green onions, which I skipped. My family especially commented on how good the chicken was in this dish. Great meal! Thanks for sharing!
