Ingredients

The ingredients are:
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons liquid honey
  • 2 tablespoons lime juice (freshly squeezed)
  • 1 tablespoon olive oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoons balsamic vinegar
  • 1 teaspoon minced garlic
  • 1 1/2 pounds boneless skinless chicken breasts (cut into 1" cubes, about 1 1/2 lbs/680g, 4 breasts)
  • 1/2 cup sun-dried tomatoes (not oil packed)
  • 8 ounces dry bow-tie pasta (whole grain, about 5 cups dry, 227 grams)
  • 3 cups broccoli florets
  • 1/2 cup chopped green onions
  • Sriracha, to taste (optional)

How to Make

  • Step 1: In a small bowl, whisk together soy sauce, honey, lime juice, olive oil, mustard, vinegar and garlic.

  • Step 2: Pour marinade over chicken cubes in a shallow, glass baking dish.

  • Step 3: Stir until all chicken pieces are coated with marinade.

  • Step 4: Cover and refrigerate for 30 minutes.

  • Step 5: Pour 1 cup boiling water over sun-dried tomatoes and let soak for 15 minutes.

  • Step 6: Drain tomatoes and chop; set aside.

  • Step 7: Prepare pasta according to package instructions.

  • Step 8: Add broccoli florets to pasta cooking water for last 3 minutes.

  • Step 9: Drain pasta and broccoli and return to pot; keep warm.

  • Step 10: Transfer chicken and marinade to a large, non-stick skillet.

  • Step 11: Cook and stir over medium-high heat until chicken is cooked through, about 6-7 minutes.

  • Step 12: Add pasta, broccoli, sun-dried tomatoes and green onions.

  • Step 13: Mix well.

  • Step 14: Serve immediately.
