"This isn't a true souffle, more of a casserole, and not sweet like other carrot souffle recipes I have found. This is pretty similar to a popular area restaurant's side dish that comes on their family-style served menu."
Preheat the oven to 375°F.
Mash the carrots, and melt the butter. Mix together all the ingredients and pour into a greased 8 inch baking dish.
Bake for 40 to 45 minutes.
