BBQ Chicken Kebabs

"A nice blend of flavours, not too spicy but it has some zip. If you wish add a couple of cherry tomatoes and mushrooms to the skewers. I use the long metal skewers but if you are using bamboo skewers soak them in water for at least an hour before threading."

Step 1

Thread your skewers alternating chicken with the red and green peppers

Step 2

Mix the remaining ingredients

Place the skewersin a shallow dish, pour on the marinade. Place in fridge for at least 2 hours. Turn them a few tims so all sides are coated with the marinade

Step 4

Grill the kebabs over medium heat about 6 inches from the heat source, turn them so all side cook evenly. It takes approximately 15 minutes depending on the size of the chicken pieces. Do not overcook or your chicken will be dry

This is a great tasting skewer recipe with a nice subtle curry taste. I cooked these under the broiler 6 minutes per side and they turned out perfectly moist and tender.
