Ingredients

The ingredients are:
  • 1 1/2 pounds boneless skinless chicken breast ( cut into bite size pieces)
  • 1 sweet red bell pepper (seeded, membrane removed, cut into 1 inch pieces)
  • 1 sweet green bell pepper (seeded, membrane removed, cut into 1 inch pieces)
  • 3 large garlic cloves, crushed
  • 1 small onion, finely chopped
  • 2 teaspoons brown sugar
  • 1 teaspoon curry powder
  • 1 cup tomato juice
  • 1/2 teaspoon ginger powder
  • 1/2 teaspoon cayenne
  • 1 teaspoon fresh lemon juice
  • Salt and pepper to taste

How to Make

  • Step 1: Thread your skewers alternating chicken with the red and green peppers

  • Step 2: Mix the remaining ingredients

  • Step 3: Place the skewersin a shallow dish, pour on the marinade. Place in fridge for at least 2 hours. Turn them a few tims so all sides are coated with the marinade

  • Step 4: Grill the kebabs over medium heat about 6 inches from the heat source, turn them so all side cook evenly. It takes approximately 15 minutes depending on the size of the chicken pieces. Do not overcook or your chicken will be dry
