Step by Step Method

Step 1

Place chicken into medium bowl; sprinkle with sage, thyme and salt and pepper and toss until coated.

Step 2

Heat oil in large frying pan on med-high heat.

Step 3

Add chicken; cook for 3 to 5 minutes, stirring often, until no longer pink.

Step 4

Transfer to plate and cover to keep warm.

Step 5

Reduce heat to medium.

Step 6

Add vinegar to same frying pan; heat and stir for about 2 minutes, scraping any brown bits from bottom of pan, until vinegar is reduced by half.

Step 7

Add jam and orange juice; heat until jam is melted and sauce is thickened.

Step 8

Add chicken; heat and stir for 1 to 2 minutes until heated through.

Step 9

Garnish with raspberries.

Step 10

Make about 2 cups.

Balsamic and vinegar go so very well together and in this dish it shined! The chicken came out flavorful and so tender. For the topping, used frozen whole raspberries because they are way less expensive than the fresh and they are so good. We loved this dish! Thank you, Luvcookn, for sharing this here with us. The hubby and I both enjoyed this dish...I was hoping it would be more red...but the balsamic vinegar turn it more brown...but the flavor was sweet and tart...we just loved it...I served it along side of scalloped potatoes and cheesy zucchini...for a very delicious meal...made for "Billboard" tag game...

I made this last week when I finally got to replenish my Balsamic vinegar and raspberry jam. So quick and easy, makes for great presentation and above all tastes terrific. Other than not having fresh raspberries I made as posted. My raspberries are about ready so no surprise that this will be seeing to a repeat very very soon!
