Step by Step Method

Step 1

Preheat oven to 425

Step 2

Pat chicken dry and salt and pepper all over

Step 3

Mix butter, garlic, thyme and zest all together in small bowl

Step 4

Rub all over chicken including under the skin

Step 5

Place potatoes and lemon rounds in 9x13 baking dish

Step 6

Add thighs on top and bake for 35 minutes

Daily Inspiration

We thoroughly enjoyed this dish. I scaled the recipe back a little and cut the butter mixture in half as there was quite a bit. I'm saving it for another use. This chicken and potato dish was easy to make with great results.

Awesome recipe marra. We loved it. I used large skinned and boneless chicken thighs (all I had on hand) they worked great in this recipe. The chicken was wonderful, it was so flavorful and tender as were the potatoes. Thanks for sharing this lovely recipe. Made FYC tag game.

I scaled back for one serve and used two small bone in thighs skin on and added some steamed green veg to make a complete delicious meal, thank you Marrmamba made for For Your Consideration tag game at FF&F.
