The ingredients are:
  • 3 pounds chicken thighs (bone in, skin on chicken thighs)
  • Salt
  • Pepper
  • 6 garlic cloves minced
  • 1 lemon, zest of
  • 1 /2 cup unsalted butter (at room temperature)
  • 1 tablespoon fresh thyme
  • 1 lemon, cut into rounds
  • 1 pound potatoes (baby, quartered)

How to Make

  • Step 1: Preheat oven to 425

  • Step 2: Pat chicken dry and salt and pepper all over

  • Step 3: Mix butter, garlic, thyme and zest all together in small bowl

  • Step 4: Rub all over chicken including under the skin

  • Step 5: Place potatoes and lemon rounds in 9x13 baking dish

  • Step 6: Add thighs on top and bake for 35 minutes
